Reasons to Love This Recipe
The arrival of warmer weather has put a strong desire in me for seasonal food and fresh salads. Nothing makes me happier than indulging on fresh summer veggies, particularly when local farmer's markets are the source!
This is a perfect time of year to indulge in a Strawberry Spinach Salad or a Kale Caesar Salad. This time of year, the produce is so crisp and fresh that it's ideal for making a nutritious salad any day of the week.
Even while I like the traditional green salads, it's sometimes enjoyable to try something new. All it took to make this fruit and vegetable salad was cutting up some of my family's favourite fruits and fresh veggies, adding a zesty dressing, and presto!

Unlike other store-bought dressings, this dressing is quite simple to create and doesn't need any strange ingredients. Just three components!
-
It works wonders to encourage your children to eat fruits and vegetables. (You may choose the foods your children are most likely to eat from the various variants.)
-
I adore the lovely nutty crunch that the sunflower seeds bring!
-
It seems particularly vibrant, fresh, and attractive when presented in a crisp, green romaine lettuce leaf.
For me, the nicest thing about this is that I can simply keep eating it without worrying about ingesting a lot of calories or carbohydrates. It makes me think of one of my favourite healthy snacks, Chipotle Lime Edam me, which tastes amazing and is packed with of nutrients (not to mention sunflower seeds!).
I also adore my Raspberry Frozen Yogurt (it doesn't include sunflower seeds, LOL) and this tasty and unusual Burrito Salad with Fruit as healthy snacks.
Ingredients Required
Fresh Produce
-
Cucumbers: English cucumbers are the greatest because of their slightly sweeter and slightly softer skin than standard cucumbers. However, any kind of cucumber will work for this dish.
-
Red pepper: You may use yellow here, but I like to use red for that beautiful pop of colour. Because of their intense taste, green bell peppers don't work as well in this dish.
-
Leaves from a romaine lettuce; optional for serving.
Fresh Fruits
- Strawberries: provide a delightfully tangy taste and vibrant colour; seedless grapes are ideal.
Additional components
-
The addition of fresh basil enhances the taste profile, while sunflower seeds provide a nutty and crunchy touch.
-
Extra virgin olive oil; if necessary, you may use canola oil in its place.
-
Fresh limes work best, but in a hurry, you may use lime juice from a bottle.
-
salt: to counterbalance the lime juice's sweetness and acidity
How to prepare a fruit and vegetable salad
-
Finely chop the cucumber into small pieces.
-
After cleaning and seed removal, cut the red bell pepper into bite-sized pieces.
-
Slice and trim the strawberries.
-
To make eating the grapes with a fork simpler, cut them in half.
-
Finely chop the just harvested basil.
-
Add the sunflower seeds to a big bowl along with all the fruits and vegetables.
-
Juice the lime and mix it with the salt and olive oil.
-
Fill the bowl with the dressing.
-
Toss in the coat.
-
Present this leafy green salad with fresh fruit on big, crisp lettuce leaves.
Expert Tips and Tricks
-
Remember to give your fruit a good wash and pat dry. Patting dry is vital since you don't want any additional liquid in the final salad.
-
I suggest saving the sunflower seeds until just before serving if you are preparing the easy vegetable salad and then taking it on a picnic. In this manner, when everyone digs in, they will still be lovely and crispy.
-
Feel free to add more basil than the recipe calls for if your family like it. Since we all love it so much, I often add more basil.

Substitutions and Variations
-
Do you dislike red bell peppers? Use sliced or shaved carrot instead.
-
For even more flavour depth, you may add some chopped red onion or a dash of black pepper. This dish will also work nicely with sweet onions.
-
Do you not have any lime juice or a lime close by? Feel free to add lemon juice! You could even use red wine vinegar in a hurry.
-
Is the cucumber missing? Replace with four celery stalks, sliced into bite-sized pieces.
-
To reduce the preparation time, use raspberries instead of strawberries and omit the grape slicing.
-
Do you want the easy vegetable salad to last longer? Add cooked, chilled macaroni, penne, or rotini pasta.
-
Feel free to use any other raw fruit or vegetable that you choose. Some vegetables that might be excellent include zucchini or yellow squash, apples, blueberries, cauliflower, carrots, cherry tomatoes, or sliced roam tomatoes.
-
Add some creamy, delicious feta cheese on top by sprinkling it on!
Keeping Remaining Food in Storage
-
Would it be a good idea for you have any extras, refrigerate them in an impermeable holder. Remove the container from the refrigerator just before serving, mix the fruit and vegetables to cover them again in the dressing, and let it rest for a half hour or so to reheat somewhat. This will assist in enhancing each taste.
-
The crispness of the fruit and vegetable salad with lettuce may not be as high as it would be if served right away, but it will still taste great!
-
Toss everything again to cover with the dressing just before serving the chilled salad, and top with more sunflower seeds for a crunchy crunch. Serving tip: Since there can be extra liquid in the bowl bottom, use a slotted spoon.
